Ingredients
360 ml olive oil
400 g sugar
zest of a lemon
120 ml natural orange juice
120 ml cold-boiled liquor (with 1 tbsp. Ash)
40 ml of raki or brandy
1 tbsp cinnamon powder
¼ κ. Γ. clove powder
½ κ. Γ. ammonia
½ κ. Γ. baking soda
600 gr. about soft flour
400 gr. Sesame
Preparation
I put the sesame seeds in a colander and rinse it 2-3 times with plenty of water. I drain it well, spread it on a kitchen towel (old because it will be oiled) and cover it with it.
I make the liquor by boiling in a saucepan twice the amount of water and dissolving in it 1 tbsp of pure ash (which comes from wood without chemicals). Once the mixture has boiled for 1 minute, I take it off the heat and after I leave it for 10-15 minutes for the ashes to "sit" at the bottom, I slowly take the top part of the liquid in another bowl, leaving the ashes in the pot and a portion of the liquid. I let it cool completely and then with a strainer in which I have put cotton I strain the liquid again in another utensil and I have the liquor ready.
In a large bowl, mix the olive oil, sugar, raki, liquorice, lemon zest, cinnamon and cloves. Divide the orange juice into two equal parts, in one I dissolve the ammonia and pour it into the large bowl, while in the other I dissolve the soda and add it to the bowl.
I mix the ingredients well by hand and gradually I add the flour until it becomes a dough that does not stick to my hands. I put it in the bowl, cover it with cling film and leave it in the fridge to rest for half an hour.
When I take it out of the fridge, I take some of the dough each time (18gr.) I make a ball and open it in a stick about 10 cm long. Then I roll the stick on the sesame to stick well and I put it in the pan on oil glue.
Bake the plates in pairs in a preheated oven in the air at 1800 C for about 25-30 minutes, until their color darkens. When this time has passed, I take them out of the oven, leave them to cool for 2 minutes and put them on a grill to cool completely.
They are eaten cold and I keep them in an airtight box.
