Ingredients


250 gr. pen
100 gr. sweet gruyere (eg Cretan)
100 gr. pecorino or other spicy cheese
100 gr. slice
4 slices of bacon
1 litre of milk
3 tablespoons tablespoon butter or margarine
3 tablespoons flour soup
nutmeg
Salt Pepper
sweet paprika

 

Preparation

The way of making this wonderful souffle is quite easy and with very simple steps you will have in your hands the souffle of your dreams. To begin, fill a saucepan halfway with water and bring the water to a boil. Once cooked, add the spaghetti and let it cook for about 5-10 minutes. Add a little salt and olive oil to the water so that they do not stick.

In the meantime, until the spaghetti is done, start making our homemade béchamel. In a saucepan, melt the butter and add the flour, stirring constantly. Once the flour is colored, add the milk and stir constantly. Add salt, pepper, cinnamon and nutmeg and finally the egg yolks.


When the cream starts to thicken, it is ready to use. Then cut the bacon into pieces and toss it into the béchamel along with the yellow cheeses and keep some grated cheese aside to spread on top.

Strain the spaghetti and put it in a large pan. Put the béchamel on top and mix the spaghetti and béchamel together in the pan. Finally, add grated cheese on top and bake in a preheated oven at 180 degrees Celsius for 15-20 minutes until it turns brown on top.

Our souffle is ready to enjoy.
