Ingredients
For the barley:
2 glasses of barley wine
4 glasses of wine sauce (from the already cooked chicken you will make)
For the chicken:
1 chicken cut into portions
1 large dried red onion
2 tbsp sauce pulp (if you have homemade even better)
1/2 pack of tomato juice
5-6 spices
1/2 tsp cinnamon
2 bay leaves
1 glass of white wine
1 clove garlic
olive oil
salt (preferably coarse) and pepper
Preparation
First you will make your chicken.
Put the oil in a saucepan, put the chicken and fry it well on all sides.
Remove from the pan and add the onion that you will have cut by hand and the garlic clove. Once they are polished and their aroma starts to come out, put the chicken you removed before in the pot again and quench with the wine.
Once the wine has evaporated, add the pulp, stir until "cooked" and add the tomato juice. Mix well, add water, salt and pepper and cook until your chicken is well cooked.
While the chicken is boiling, preheat your oven to 200 degrees Celsius.
Once the chicken is ready, expect to have a sauce of about 4 to 5 glasses of wine (a glass that will measure your barley).
Put your chicken, sauce and barley in a pan, mix well and put it in your already preheated oven.
Once you see that your food starts to boil, stir your barley once, put it back in the oven, turn off the heat completely and let it absorb the liquids, simmering.
This way you will make your barley granular, melted and will have as much moisture as needed without getting muddy.
