Good morning my friends, let’s create today something that I really love , as always together step by step
450 - 500 g potatoes
4 slices of bacon sliced
1 onion grated
1 clove of garlic, melted or chopped
45 g butter
4 KS flour for all uses
360 ml hot milk
120 ml sour cream
20 g grated emmental cheese
a pinch of grated nutmeg
Cut the bacon into square pieces and sauté it in the pot or pan, on high heat for a few minutes. I take it out on a plate.
In the same pot, sauté the onion with the garlic for a minute, lower the heat to medium and add the butter to melt. Then I add the flour and let it roast for a minute.
Add the hot milk little by little, stirring constantly to combine with the mixture.
Finally, I add the cream, continuing to stir gently until the sauce starts to become thicker and "sits" on the back of the ladle.
Remove the pan from the heat and add 20 g of grated cheese, ½ kg of salt, ¼ kg of pepper and a pinch of freshly ground nutmeg, stirring to melt and combine in the sauce.
Wash, clean and cut the potatoes into thin slices, add γ kg of salt and a pinch of pepper and mix well.
In a fireproof dish with a diameter of 25 cm that I have buttered, I put a tablespoon of sauce (just to spread).
Spread a layer of potatoes on it, overlapping each other a little.
I continue to sprinkle half the bacon and then I spread half the dose of sauce.
In the same way I make another layer of potatoes - bacon - sauce.
I finish by sprinkling 70 g of emmental all over the surface and a branch of fresh thyme on top.
Bake in a preheated oven, on the heating elements, at 200 * C for 45 minutes. After the first 30 minutes that the surface has turned brown and the cheese has melted, I cover it with a foil until the end.
Take it out of the oven, let it cool for 15 minutes before serving with a large spoon.
