Good morning my friends, let’s try a different way of cooking eggs that we really love here in Greece



4-5 eggs
2 ripe tomatoes
1 onion
1 green pepper & 1 hot pepper
200 g hard feta
4 tbsp. olive oil
Salt & freshly ground pepper



1. Grate the tomato and finely chop the pepper and onion. Put the pan on medium heat and sauté the onion and pepper in olive oil for 3-5 minutes. Add as much hot pepper as you want, depending on the intensity you want. Add the tomato and leave for about 10 minutes until it drinks its liquids.

2. Until the tomato is cooked, break the eggs in a bowl and beat them lightly with a fork. Season with salt and pepper carefully, calculating the saltiness of the feta. Lower the heat completely and put the eggs in the pan, stirring constantly with a wooden spoon. Once they start to coagulate, break the feta with your hands in the pan and add one last stir.

3. Turn off the heat, lower and cover the pan and set aside for 5 minutes.

4. Serve sprinkling with fresh oregano and accompany with french fries
