Good morning my friends, special food for today, let’s do some magic

Ingredients

1 packet of spaghetti or tagliatelle
1 package of shrimp (700-800 gr. Approximately) frozen or fresh
1 large onion, finely chopped
2 cloves garlic cut into thick slices
1 chopped hot pepper (optional if you like hot) or 1 pinch of hot paprika
1/4 cup teaspoon olive oil
2 packs of crushed tomatoes (1 mashed in the multi) or 5 large ripe fresh tomatoes, peeled and chopped or grated
1 tbsp. tomato paste
1 cut etc. sugar
1/4 cup white dry wine (or a shot of ouzo if you want a more intense taste)
Chopped parsley
Salt Pepper

Preparation

Peel a squash, grate it and squeeze the juice. Set aside the shells and the heads of the shrimp after first rinsing them lightly.
Put the shrimp heads and shells in a saucepan with 1½ glass of water to boil for 2-3 l, from the time of boiling, to get their broth drained. Then drain the broth and discard the shells and heads.
At the same time, put the oil in a shallow and wide pot to heat over medium heat, and sauté the garlic and shrimp for about 1-1.5 l. Quench with wine or ouzo and as soon as the alcohol evaporates, remove the shrimp with a pair of tongs and set aside.
Add the chopped onions to the hot pot with the garlic and sauté, stirring for ½ l. Add the chopped tomatoes, the tomato paste, salt, pepper, sugar, the pepper or paprika, the parsley and the parsley and the parsley we boiled.
Once they boil, cover the pot, lower the heat and simmer the sauce for about 15-20 l. If necessary, during the cooking, add a little more of the remaining ½ cup. shrimp broth. Three (3) l before removing from the heat, add the shrimp and shake the pot to cover the shrimp with the sauce. Do not let the shrimp cook for more than 3 l.
At the same time, boil the spaghetti according to the instructions on the package and drain it. Serve hot on plates drizzled with sauce and shrimp. Optionally, instead of serving the shrimp sauce on the spaghetti, we can put 1-2 tbsp in each plate with spaghetti. from the sauce, mix them (to cover the spaghetti with the sauce) and serve the shrimp on top.

I hope you enjoy this and I am waiting for your comments

Stay safe and healthy my friends and take care of your people

My best wishes from Greece
