    500 g spaghetti boukatini or fetucini
    150 g pancetta or bacon
    2 tbsp. olive oil
    1 sc. garlic
    2 tbsp. butter
    2 fresh eggs
    150 grams of parmesan and pecorino mixed
    freshly ground pepper
    a little chopped parsley



    For the traditional carbonara with egg,
    the authentic Italian recipe Carbonara with egg, we first boil our pasta in salted water. Heat the olive oil and brown the chopped pancetta for 5 ′ for the traditional carbonara with egg.

    Break the garlic clove and add it and leave it to flavor for 1´ -2 ′. We remove it. Beat the eggs in a bowl with half the grated cheese. Add salt and pepper. Drain the pasta and keep some of the boiled water.
    Put them hot again as they are in the pot. The fire must be at the lowest. Add the butter and mix well to melt and flavor the pasta with the aroma and taste of butter.
    Add the baked pancetta to the pasta as well as the beaten eggs. As it is all hot, mix with tweezers to join the ingredients.
    Add the remaining cheese and remove from the heat.
    Add chopped parsley, mix well and serve immediately.
