Foodbook #672 Sweet Semolina Cake - Ravani


Good morning my friends and happy weekend a nice traditional dessert from Naxos today , let’s do it together



1 cup sugar
6 eggs
1 vanilla
1 tbsp. baking powder
1 cup flour g.o.x.
1 cup fine semolina
1/2 cup milk
lemon zest
grated coconut for the finish

For the syrup

2½ φλ. water
2 cups sugar
a little lemon juice
2 tbsp Naxos butter


We make the syrup first because it must cool completely.
Put the ingredients (sugar, water, lemon) in a small saucepan and mix.
From the time it boils, boil for an additional 5 minutes.
Remove from the heat and add two tablespoons of Naxos butter. Stir to melt.
Allow the buttery syrup to cool completely.
For the ravani cake, beat the sugar with the eggs with a hand mixer until the mixture is well fluffed and puffed (about 4-5΄).
Add the vanilla.
Put in a bowl all the solids (flour, baking powder and semolina). We mix them. With the mixer running, alternate the solids with the milk into the mixture.
Pour into a well-buttered pan no. ravani to brown and peel off the walls of the pan.
Remove the ravani from the oven.
Slowly pour the hot ravani with the cold syrup and leave it to cool completely.
