Good morning my friends, at following recipe the magic ingredient is Greek cheese feta , try it and you will remember my words . Let’s do it together
Ingredients
600 grams. flour possible
1 cube of fresh yeast 25 gr.
1 tbsp. sugar
1 tbsp. salt
water as it rises (about 1½ fl.)
a little oil for the bowl
For the filling
300 grams feta cheese in crumbs
3 tbsp. olive oil
2 tbsp. fresh mint
freshly ground pepper
1 egg
1 tbsp. milk
a little extra flour
Preparation
We start the cheese bread with feta, activating the yeast first. Dissolve it in a bowl with a little warm water and sprinkle with a little sugar. Stir to dissolve. Cover with cling film and leave for 10 minutes to activate. When the surface foams, it is ready and we add it to the flour.
In another bowl put the flour and mix the salt with a spoon. Add the activated yeast and start kneading. Add a little water until dough is formed.
Take the dough out on the workbench and knead it vigorously for 10 minutes, making pulls of the dough, stretching it and restoring it.
Lightly grease a bowl and put the dough. Cover the bowl and let the dough double in volume. The blowing time varies depending on the ambient temperature. The hotter the place, the faster the dough rises. Even in the fridge it will swell, but it will be too late.
Put the feta cheese, the oil, the mint, the pepper in a bowl and mix. Add them to the already puffed dough. Knead well, to trap the ingredients in the dough. If it sticks, sprinkle with flour.
Divide the dough into 4 pieces. Shape 4 round or elongated loaves. We flatten them by pressing them lightly. Place them on oiled sheet metal. We cover them well. Allow to double in volume for about 40΄.
Beat the egg with the milk and spread it all around. Lightly carve their surface with a sharp knife. Bake in a preheated oven at 180 degrees C for 40 minutes, until well browned.
What you should definitely try is fried bread with or without feta. Easy and fast snack for the bakery and the house.
Stay safe and healthy my friends and take care of your people
My best wishes from Greece
