Good morning my friends, I don’t like recipes with fishes and other “sea” things very much but this one is something special everyone must give a try , let’s cook it together….

Ingredients

For the sea bass

800 gr. sea bass, fillet
salt
olive oil, for sautéing


For the salad

100 gr. fennel, cut into thin slices
10 gr. lemon juice
5 gr. lemon zest
80 gr. fresh onions, finely chopped
40 gr. Kalamon olives, fillet
4 gr. parsley, leaves
300 gr. cherry tomatoes, cut in half
40 gr. olive oil
salt


For the sauce

200 gr. Fresh tomato juice
50 gr. olive oil
10 gr. balsamic vinegar, white
2 gr. lime zest
lime juice
basil, finely chopped
salt
sugar

 

Preparation

For the sea bass

Make a few superficial cuts in the skin of the fillet so that it does not stretch during frying.

Place a pan on high heat (preferably non-stick) and add the olive oil. Salt and put the sea bass fillets in the pan on the side of the skin.

Press the fillet with the spatula for a few seconds and then lower the heat and sauté until it gets a nice color and the skin starts to crisp.

Turn over and continue cooking for a few seconds, making sure the fillets are cooked but remain juicy.

For the salad

In a bowl, mix all the ingredients together and salt.

For the sauce

Put the tomato juice, vinegar, lime zest, lime juice, olive oil and salt in a bowl and mix with a whisk.

Correct the taste with the sugar if necessary, add the basil and mix.
