Foodbook #647 small cheese pies with mizithra



Good morning my friends, delicious homemade snack for today, easy and fast


For the sheet

1 cup lukewarm water
Or a cup of extra virgin olive oil
Or cup of tsikoudia
juice of 1 lemon
½ κουτ. sweet salt
5 cups flour for all uses + a little extra to open the sheet
For the filling

1 kilo of sweet mizithra of Crete
75gr. sugar
2 medium eggs
1 teaspoon sweet cinnamon
For frying and serving

olive oil
powdered or crystalline sugar



Sift the flour into a bowl, add the salt and make a puddle in the center. Put the olive oil, tsikoudia and lemon there and start taking the flour and rubbing it with your fingers. Gradually add the water and knead until you get a soft and pliable dough that will not stick to the hands, not hard. Allow to rest for at least 30 minutes.

In a separate bowl, mix all the filling ingredients to become a creamy mixture.

Divide the dough into balls and open it into a thin sheet with the help of a rolling pin on a floured counter. Cut the dough into trays with a 5-6cm cup. or with a saucer of coffee, place a teaspoon of filling in the center of each, fold and press around with a fork to close in a pie. Arrange them in order until they are finished.

Heat plenty of olive oil in a pan (be careful not to smoke) and fry the pies a little at a time in hot oil until they turn brown on both sides. Take them out to drain on kitchen paper.

Serve the cheese pies hot or lukewarm sprinkled with icing sugar and cinnamon.
