Good morning and happy Sunday my friends, let’s create something delicious and very healthy for today


Ingredients

1 kg of fresh broad beans
2 large potatoes cut into cubes
1 flitz. olive oil
1 chopped onion
1 clove garlic
5 ripe tomatoes, peeled and chopped
⅓ flitz. chopped parsley
1 flitz. boiling water
salt
pepper


Preparation

We clean the beans from their stalks, even if they are hard enough, and from the side, like the beans. We wash them well.
Put the olive oil in a saucepan and sauté the onion and garlic for 3 minutes, until they are shiny. Add the beans and sauté them until they wither and get everything oily. Saute for about 10 minutes.
Add the potatoes, tomatoes, water, salt and pepper and shake the pot. Once our food is boiling, lower the temperature, cover the pot with a lid and simmer for about 45 minutes.
Check the food liquids and if necessary add a little more boiling water.
Add the parsley and continue cooking for another 10 minutes.
Serve the food hot with a nice Greek salad
