Good morning my friends, let’s try a delicious dessert for today

Ingredients

8 medium eggs
200 gr. sugar
200 gr. fine semolina
200 gr. flour for all uses
50 gr. cow butter
5 gr. baking powder
2 gr. grated mastic (optional)
Grate a lemon

Ingredients for the syrup

750 ml water
620 gr. sugar
3-4 slices of lemon


Execution for ravani
In the mixer bucket, with the whisk, beat the eggs at medium to high speed with the
sugar, until fluffy and white.

In a kettle, heat the butter, but without letting it burn.

After our eggs are white, we add the butter slowly, until it takes it and we continue the mixing until our mixture is fluffy again.

Then, in a large bowl, put the flour, semolina, baking powder, mastic and zest and mix well with a whisk.

Immediately after, add them slowly, (in 3-4
doses), in the mixture with our eggs and mix gently with a fork, until it becomes one
fluffy mixture.

Finally, butter and flour a 25-30 cm pan, pour
inside our mixture. Bake in a preheated oven on the middle grill at 170-
180 degrees for about 40 minutes.

Execution for the syrup
Once we put our ravani for baking, we put all the ingredients for our syrup in a saucepan.

Once it gets a boil, take it off the heat to start
to get cold.

After the ravani is cooked, we immediately syrup it, as it is hot, with the lukewarm
syrup, which before we have removed the lemon slices.
