Good morning my friends, today I will show you a recipe that I try yesterday for first time and I must say the results was amazing
Ingredients
2 large eggplants
100 gr. Ham (raw or cooked)
150 g tomato sauce (Homemade tomato sauce)
80 g grated cheese (mozzarella)
1 medium egg
A handful of breadcrumbs
Olive oil
Salt, pepper and oregano
Preparation
Preparation of eggplants:
We started by cleaning the aubergines. Cut them in half and remove the pulp without piercing the eggplant.
Using a spoon, carve the edges in such a way that the eggplant retains its shape, and cut the inner core into squares with a knife and remove them.
Put plenty of water to a boil, add salt, and then clean the aubergines without the frosting, boil for 5 minutes, remove from the water and allow to drain upside down.
On the other hand, put the pieces from the inside of the eggplant in a pan with olive oil, salt and sauté until well softened, about 5 minutes.
Turn off the heat and add the diced ham.
And while we are filling, we put the oven to heat at 200ºC up and down.
Take the filling in a large bowl and add the remaining ingredients, tomato sauce, oregano, egg and cheese, although we keep some cheese to
add over eggplants.
Mix everything well and finally add a little breadcrumbs, so that the filling is not too wet.
Place the aubergines in a pan suitable for the oven, glued to each other to maintain their shape when filled with the mixture.
Sprinkle with grated cheese and put in the oven at 200ºC and medium heat for about 20 minutes until well cooked.
Remove from the oven and let the eggplants cool slightly and they are ready to eat… you will see how good they are…
