1 fresh Nitsiakos chicken, in portions
1 cup of coffee Carolina Rice
4-5 sprigs of celery
1 large onion cut in half
2 carrots in slices
4-5 whole spices
1 teaspoon sweet spice mix for chicken
2 bay leaves
2 teaspoons cow butter soup
juice of 1 lemon
2-3 sprigs of chopped parsley
Put the chicken with the carrots, celery, onion, bay leaf, spices and spice mixture in a deep saucepan. Add water, until it covers them very well, salt and initially on high heat, let it boil. You skim it.
Lower the heat and simmer until the chicken is very soft. Using a slotted spoon, remove the chicken, onion and bay leaf. Add the rice, maybe a little more water and cook for another 10-15 minutes.
Beat the egg white in the multi, add the yolk and the lemon and when they are beaten, add two or three spoons from the soup. Lower the heat to 1 and transfer the mixture to the soup. Stir with quick movements. Remove from the heat and add the parsley.
Bone all the "second" pieces of chicken together with a little of the leek and add the chicken to the soup. The remaining "good" pieces, drain well and melt the cow butter in a wide pan. Once melted, sauté the pieces over high heat until well browned. Quench with lemon juice. There is no greater taste!
