Foodbook #612 Pan-fried beef liver

Good morning my friends and happy June , today we will start our month with a very delicious meal , so let’s do it together


Ingredients

1/4 cup olive oil
2 dried onions cut into thin slices
1 bay leaf
500 g of beef liver
a little flour
1/2 cup white dry wine
2 tablespoons parsley or a little fresh chopped thyme
salt
freshly ground pepper

 

Preparation

Cut the beef liver into thin slices and then into long narrow pieces the size of a bite.

Heat half the olive oil in a non-stick pan and let the onions over medium heat become transparent, without taking on color. Lightly salt them and add the bay leaf. Leave them for about 10΄-12΄ to turn blonde and soften. Take them out on a plate.

Heat the remaining olive oil over high heat. Sprinkle the liver with a little flour and shake it lightly to remove the excess flour. Brown the flour-soaked liver in olive oil. We make sure it gets colored all around, for about 3΄. Then add the caramelized onions to the pan again and sauté for 1΄, stirring.

Quench with the wine and let almost all the liquids evaporate and leave the liver with its oil. Sprinkle with chopped parsley and season with salt and pepper. Serve with chopped french fries or white rice.
