Good morning my friends, let’s make something delicious and special for today :)


For the dough:

450 gr. flour, soft

40 gr. granulated sugar

185 ml milk, whole

60 ml sunflower oil

1 egg, medium

1 yolk, for the spread diluted

2 tbsp. baking powder

Cinnamon, grated for sprinkling


For the filling:

350 gr. ξινομυζήθρα

45 gr. granulated sugar

1 egg, medium

1 tbsp. grated cinnamon



Add the flour, sugar, baking powder, egg, milk and sunflower oil to the bowl of the mixer and beat with the hook on high speed until a smooth dough is formed. Once formed, remove the bucket from the mixer, wrap in cling film and transfer the dough to the refrigerator for 1 hour.

At the same time, empty all the filling ingredients in a bowl and mix them with a spoon, until they are homogenous.
Once an hour has passed, we flour our workbench, transfer the dough there and open it with a rolling pin in a rectangular shape 3 mm thick.
Next, take a glass or a round cup 10 cm in diameter and cut the dough.
Then, place in each dough 1 + ½ kg. from the filling in the center and pinch the edges to create knits. Once they are ready, transfer them to a baking tray that has been coated with oil paste. Follow the same procedure for the leftover dough.
Finally, grease the scallops with the yolk and bake in a preheated oven at 180 ° C in air for 20 minutes.
Once cooked, let them cool for 5-10 minutes and serve sprinkled with cinnamon.
