Ingredients
For the lamb
1.3 kg lamb leg
270 gr. marinade
4 gr. salt
2 gr. pepper
For the marinade
100 gr. olive oil
15 gr. garlic, whole cloves
30 gr. parsley stalks
50 gr. mustard
7 gr. thyme, twigs
5 gr. rosemary, leaves
10 gr. water
For the potatoes
1 kg baby potatoes
70 gr. olive oil
130 gr. lemon juice
1 gr. Laurel
5 gr. oregano
100 gr. butter
Preparation
For the lamb
In a pan, salt the lamb well with enough salt, and pour over the marinade, smearing with our hands and making sure that it goes everywhere.
Place the lamb on top of the potatoes and cover with foil. Bake in a preheated oven at 120 ° C for about 5-6 hours, depending on the size of the piece we are cooking, until the meat softens and gets a nice color.
For the marinade
Mix in a blender olive oil, a little water, garlic, fresh thyme, parsley along with the stalks, rosemary and a little mustard. Grind them to become a smooth mixture.
For the potatoes
Place the potatoes in the pan, add the oil, butter, lemon juice, oregano, bay leaf and salt.
Tip
If the lamb does not get color, increase the oven to 180, remove the foil and cook it for a few minutes so that it gets a nice color.
