Foodbook #582 orzo with tomato and basil


Good morning my friends and happy Sunday , let’s create something easy today with not many ingredients and very short time of cooking


1 onion
1 cup barley
3 cups water
1 cup tomato juice
a little olive oil (3-4 tablespoons)
salt and pepper
I clean the onion, cut it into pieces and sauté it with a little olive oil. Add the barley and mix it with the onion and oil and then add the remaining ingredients.

Let it simmer for about 15 minutes, maybe less, until it absorbs most of the liquid (not dries completely). I mix it here and there so that it does not stick.

Once the barley is cooked, I take it off the stove and let it rest for 2-3 minutes. Then I can serve it 🙂

Tip : It goes well with feta cheese
