Foodbook #581 risotto with vegetables


Good morning my friends, something easy , healthy and delicious food for today, let’s do it together step by step


2/3 cup Organic soft village with olive oil, or Soft village with olive oil
1 small clove of garlic mashed
1 small onion grated
1 cup chopped mushrooms
1 leek in thin slices
1 carrot cut into thin strips (julienne)
1 medium tomato, peeled, without seeds, diced
1½ cup Carolina rice
½ mug white dry wine
3½ cups hot vegetable broth
freshly ground pepper
Village Graviera Mature, grated


In a saucepan, melt the Village organic soft with olive oil and sauté the onion, mushrooms, leek, carrot and tomato, until softened for 5-6 minutes.
Add the rice and stir in the sauteed vegetables.
Pour the wine and stir over high heat for 3-4 minutes, until it evaporates. Season carefully with salt and pepper if the broth you use is already salty.
Add the vegetable broth little by little, stirring constantly. When the rice absorbs the broth, add more, continuing to stir the rice.
Continue the process, until the rice softens on the outside but holds a little on the inside (it will take about 20 minutes)
Remove the risotto from the heat, add the remaining Village organic soft with olive oil.
Stir and serve adding, if desired, Village Graviera Mature, grated.
