Foodbook #555 meatballs with potatoes

Good morning my friends, a classic and lovely recipe for all of you today , easy to cook but with many extra delicious ingredients , let’s see this step by step

For the meatballs:
1/2 kilo of ground beef
1 large grated onion, together with its liquids
1 clove garlic, finely chopped
2 large slices of stale bread (crumb only), soaked in milk and well squeezed
1 egg
1 tbsp. vinegar
2 tbsp. dried thyme
5-6 tbsp. chopped parsley leaves
2 tbsp. olive oil
salt (be careful if you put parmesan), freshly ground pepper
40 gr. grated parmesan cheese (optional)

For the potatoes:
4-5 potatoes, cut into small cubes
1 tbsp. thyme or oregano
1 orange juice
1 clove of garlic mashed (optional)
1 tbsp. mustard
4-5 tbsp. olive oil
Salt Pepper

For the pan:
2 medium sliced onions
2-3 medium tomatoes sliced
olive oil
3 tbsp. grated pecorino
3 tbsp. breadcrumbs
chopped parsley

For the meatballs: Prepare all the ingredients for your meatballs. Soak the bread in plenty of milk, squeeze well and keep the milk. Crumble the soaked bread and put it in a large bowl. Add all the other ingredients for the meatballs and knead them very well to fluff the mixture enough.
If the mixture is tight, add the milk from the soaked bread, if it is thin, add a little breadcrumbs to achieve the desired texture and density. Cover the bowl with plastic wrap and leave it in the fridge to incorporate the flavors until you make your potatoes.
For the potatoes: Peel the potatoes, cut them into small cubes and put them in a bowl. Add all the remaining ingredients for the potatoes and mix well.
For the pan: Pour a little olive oil at the base of a pan and spread the onion slices on top in 1 layer. Spread the tomato slices in 1 layer on top of the onions and sprinkle them with a little salt and 1-2 tbsp. chopped parsley.
Shape the minced meat mixture into small round meatballs and spread them thinly over the tomatoes, leaving space to put the potatoes between them. Place the potatoes between the meatballs and pour the juice from the bowl you placed them over.
Add enough water to cover half of the potatoes and meatballs. Drizzle the food with a little extra olive oil and sprinkle the grated pecorino and the breadcrumbs on top of the potatoes.
For baking: Cover the pan with foil and bake your food in a preheated oven at 200 degrees for about 30-40 l (depending on your oven) or until the potatoes are cooked and softened.
Then remove the foil and continue baking for another 15 l or until the sauce melts and the potatoes and meatballs get a nice golden color. Serve them hot with their sauce, a large nice salad, fresh hot bread and feta cheese.
