Good morning my friends, today I got for you a classic Greek traditional food that we ate at easter here in Greece but I like so much that I eat it all the year , haha so I decide to cooking it and let’s do this together

Ingredients

- 1 lamb or goat liver
- 1 kg of stamnagathi
- 3 chopped lettuces
- Or a bunch of chopped dill
- 5 chopped spring onions
- 50 ml olive oil
- 100 ml white wine
- 2 eggs
- Juice of 2 lemons

Preparation

Put the liver in a bowl with water and vinegar for 30 minutes and clean the intestines inside and out very well. Then, cut them into small pieces and boil them in salted water for about 5 minutes.
In a large saucepan, sauté the onions in olive oil and then add the intestines, liver, salt and pepper and stir until they turn brown.
- Quench with the wine, add the lettuce and cover with water. Once it boils, lower the heat and simmer the cook for about 1 hour.
- Add the herbs and the stamnagathi and let the cook boil for another 1 hour. Add water and salt and pepper if necessary.
- Cut eggs and serve.
