Good morning my friends, hope you all enjoy a peaceful and healthy month. Today I got for you one of the best traditional Greek dessert, let’s create it together step by step

Ingredients

1 packet of crust sheet
250 gr. Melted cow butter
Syrup
700 gr. sugar
250 gr. water
100 gr. glucose
1 pc. orange (peels), whole
Semolina cream
1 kg of fresh, whole milk
250 gr. sugar
1 pc. orange (zest), whole
120 gr. fine semolina
4 pcs. eggs

Preparation

In a large, rectangular pan measuring approximately 25 x 38 cm, place the half sheets. Let each sheet that we put it protrude from a different side of the pan and butter it well with a brush. Prepare the syrup and the cream, but in the meantime cover the unused leaves with a towel, so that they do not dry out.

Syrup
Boil all the ingredients together for 4 minutes, counting the time since the boiling started. Allow the syrup to cool.

Semolina cream
Put the milk with half the sugar and the orange zest in a saucepan and place it on a medium heat. Meanwhile, mix the remaining sugar with the semolina and the eggs in a bowl with the egg beater. Just before the milk boils, add 1/3 to the egg mixture and stir. Pour the mixture back into the pot with the rest of the milk and return it to the heat. Continue stirring until the cream sets and starts to boil. Then remove from the heat and immediately pour it into the pan, over the leaves. Spread it well with a spatula and fold the edges of the leaves over the cream.
Preheat the oven to 160 ° C. Cut the remaining leaves to the dimensions of the pan, so that they do not protrude from it, and spread them on top, buttering them one by one. Lightly carve the milk pudding into pieces (ie the knife does not reach the bottom). Bake and bake for at least an hour (depending on our oven), until the leaves are golden brown.
Remove the cake from the oven and immediately syrup it with the cold syrup, pouring it little by little with a ladle. We use it all. Leave the dessert aside, so that the syrup is slightly absorbed before serving.
