Good morning my friends, today I got for you a classic and very healthy Greek soup with very delicious ingredients. Let’s start
500 gr. beans
700 ml of water
2 tablespoons olive oil
1 chopped onion
1 clove garlic, finely chopped
3 carrots cut into slices
2 tablespoons tomato paste
1/2 teaspoon sweet paprika
400 gr. crushed tomato
freshly ground pepper
Soak the beans in water for 10-12 hours.
The next day, heat the olive oil in a saucepan over medium heat. Saute the onion and garlic for 2 minutes until shiny. Add the carrots and sauté until slightly softened. Add the tomato paste and rub it on the bottom of the pot to bring out its aromas.
Flavor with paprika and stir. Add the crushed tomatoes and hot water, so that it covers the beans 3 fingers. Let the bean soup boil over medium heat for about 35 minutes.
Add salt and freshly ground pepper 10 minutes before the end of cooking.
