Good morning my friends, a special dinner for all of you today . This is one of my favorite recipes and I totally recommend it , let’s take a look


2 kilos of pork pancetta, in a single piece, with its skin, washed
2 bay leaves
5-6 cloves
3 tablespoons mustard soup, spicy
1 teaspoon honey soup
½ φλιτζ. cognac
1 teaspoon sweet coriander, grated
2 teaspoons olive oil
1 teaspoon soup coarse salt
freshly ground pepper


With a sharp knife carve the skin of the pancetta. Put it in a large pot and fill with water. Add the bay leaf and cloves and put the pot on the fire. Boil the pancetta for 40 minutes (from the moment the boiling starts).

Take the meat out of the pot and wipe it well. Preheat the oven to 180oC with heating elements.

In a bowl, mix the mustard, honey, brandy, coriander, olive oil and plenty of freshly ground pepper.

Spread the pancetta mixture on all sides and sprinkle with coarse salt.

Put a plate on the bottom shelf of the oven and place the grill in the middle. There you place the pancetta with the skin facing up. Bake for 1 hour until the skin is crispy.

Remove from the oven and let the meat rest for 5 minutes before cutting.
