Good morning my friends and happy new year, I hope this year give all us everything we dream and bring our life back to normality. Enjoy your life and make it enjoyable for your people.
Let’s Create a traditional cake for today for the first day of the year.

Ingredients

For the dough:

500 gr. flour, g.o.x.

100 gr. granulated sugar

3 tbsp. dry yeast

Zest of one orange

1/4 kg gum

1/4 kg mahalepi

3 eggs, medium

120 ml milk, slightly warm

3/4 kg salt

150 gr. butter, frozen and diced

2 yolks diluted in a little water

For royal icing:

3 egg whites

500 gr. powdered sugar

1 tbsp. lemon juice

Preparation

Pour the milk and yeast into a bowl. Stir the mixture with a spoon and leave it aside for 5 minutes to activate the yeast.

At the same time, pour in the multi half the amount of sugar (50 gr.) Together with the machete, the mastic and beat them until they dissolve completely.

Then, add the flour, a little salt, the mixture with the mahlep, the rest of the sugar, the milk-yeast mixture to the bucket of the mixer and knead them with the hook at high speed.

Stop kneading, add the eggs and continue kneading for 7-8 minutes.

Once the dough is created, add the butter and then the orange zest and continue beating for another 1-2 minutes until you have a chewy dough.

Lightly grease a bowl and place the dough inside. Cover with cling film and let it swell for 1 to 1 hour.

Once the dough is puffed, transfer it to a baking tray with oil paste, cover it with cling film and leave it to rise for another 30-40 minutes.

Once the bun is puffed, spread it with 2 yolks diluted in water and bake in a preheated oven at 170 ° C in air for 20-25 minutes.

After the bun is baked, remove it from the oven and let it cool slightly.

Perform for royal icing: Beat the egg whites together with the lemon juice with the whisk in the mixer bucket on high speed, until fluffy. Once fluffy, add the powdered sugar in portions, beating at the same time, until the frosting is smooth.

For the composition: Spread the frosting evenly over the entire surface of the bun or make patterns with it, cut the king pie into pieces and serve.
