Ingredients
For the sheet:
840 g flour for all uses
1 kg of salt
420 ml hot water
1 KS vinegar
For the filling:
350 g double ground minced beef
1 KS olive oil
2 large chopped leeks
40 ml red wine
2 KS tomato paste
salt
pepper
50 - 10 ml of water
70 ml olive oil
40 g butter
Preparation
In a large bowl with the flour and salt, make a puddle in the middle and pour the water and vinegar. Mix and then knead the dough well, of medium hardness and if necessary add a little more water (so that it can be kneaded not "dry").
I divide it into two and each part into 11 pieces, ie a total of 22, which I shape into balls.
I cover them well with a damp towel and let them rest for an hour.
To make the filling, heat the oil in a saucepan over medium to high heat and sauté the minced meat until it becomes grainy. Add the leeks and cook until they wither. I quench them with the red wine, letting it evaporate a little.
Lower the heat to medium and add the pulp, salt, pepper and water as needed until the minced meat is cooked for about 20 minutes. I take it off the fire and let it cool.
Melt the butter in a bowl and combine it with the olive oil.
I take each ball of dough and open it to a diameter of about 15 cm, spread it with the oil-butter mixture and put it on top of each other.
When I am done with all 11 sheets, I take them and open them all together in a sheet with a diameter of 38 cm to cover the 32 cm baking tray and its walls. Transfer it to the baking tray or pyrex, sprinkle with butter and spread the minced meat filling on it.
I continue in the same way to open the sheet with the remaining 11 balls of dough, opening again one by one and then all together with oil-butter between them. I cover the pie with it, cut as much as is left and turn the bottom sheet to close the filling.
Sprinkle with a little olive oil-butter mixture and bake in a preheated oven at 180 * C until the leaf turns golden and cooks well for about 35 minutes.
Remove from the oven, let cool for 5 minutes and serve in pieces.
