What to do with the MIGHTY PESTO TREE?
- 3 cups fresh basil leaves, moderately packed.
- 1/2 cup of pine nuts.
- 10 oz olive oil.
- 3/4 cup fresh parmesan (grated).
- 1/4 cup fresh garlic, loosely chopped.
- 3/4 tsp both Salt and Pepper (to taste).
If you have one of the fancy blenders (Blentec, Vitamix), you will have a much easier time. You might be able to load all the ingredients in and choose a special setting similar to "Sauces and Dressings". If not, you will have to go back and forth a while pulsing the blender and scraping the sides to get every thing mixed evenly.
I think it's worth it. Just a few tablespoons of the dense pesto goes a long way covering a plate of warm pasta. It also keeps a very long time in the freezer and still tastes great. Here is the full pesto recipe from my website.
