Breakfast Cyprus Style

Welcome to Sunday, it's sunny out there, although a little chilly! I wanted to share what's on the menu for breakfast. Many of you may know that Halloumi or Hellim cheese is a specialty of Cyprus. It was virtually unknown when I was a youngster but now it is sold in supermarkets in the UK, Greece, Turkey - well, you tell me if they sell it where you live. It's usually made from sheep's milk but can be a combination of sheep and goat's milk. It can be grilled or, as I like it, fried in a spoonful of good quality olive oil until it's crunchy on the outside. Keep an eye on it and turn it once it goes golden. It's a great vegetarian alternative to sausages/eggs/bacon, etc and a good source of protein and calcium. Add to it the cherry tomatoes, cucumbers, toasted rye bread and olives - well, you might as well call it brunch! This sets you up for the day! Drizzle with a little olive oil, lemon juice or vinegar and paprika and/or herbs to zing it up a bit. Nothing beats this breakfast. Afiyet olsun (bon appetit in Turkish - wow, you get some new vocab too). Have a great day.
