📝 Ingredients
3 sheets of yufka (Turkish phyllo dough)
200 g feta cheese (or Turkish white cheese)
A handful of chopped parsley (optional)
1 egg (for the filling, optional)
Oil for frying
For brushing the yufka:
3 tbsp milk
3 tbsp olive oil or melted butter

1. Prepare the filling:
Mash the cheese with a fork.
Mix with parsley (and egg if using) until creamy.

2. Cut the yufka:
Place one sheet of yufka on a flat surface.
Cut into long triangles (like cutting a pizza).

3. Brush with milk-oil mixture:
Mix milk and olive oil (or melted butter).
Lightly brush each yufka triangle with this mixture. This keeps them soft inside and makes them extra crispy outside.
4. Add the filling:
Place a small spoonful of cheese mixture at the wider end of each triangle.
Roll tightly towards the tip, folding the edges to seal.

5. Fry:
Heat oil in a pan.
Fry the rolls until golden and crispy.
Place on a paper towel to remove excess oil.
