Did you ever walk by feed on a volcano? We did, it's impressive, so quite.. but the true power of the place accompanies you the whole way up. The thought that hundreds of years ago it was the dead-zone for every human, animal and plant is creepy and magnificent at the same time.. But did you know that volcanic soil becomes one of the most fertile lands after quite some time? On our hike to the volcano, we didn't only find many cactus figs but also fresh fennel flowers. We came up with the great idea to make a creamy risotto. We absolutely love to integrate natures treasuries in our outdoor kitchen!
Here the recipe:

Ingredience:
1cup risotto rice
¼ cup fennel flowers
2 tsp fresh turmeric, minced
1 onion finely chopped
1 garlic clove, finely chopped
cooking oil
salt and pepper
How to do:
Heat oil in a pot.
Add the garlic, onion and turmeric and stir fry until the onion turns translucent.
Stir in the rice, increase the heat and sizzle while stirring for 1-2 mins.
Then add water (preferably hot) to rice in ½ cup increments, stirring constantly and allowing liquid to absorb fully before adding more.
After 10 minutes add the fennel flowers.
Continue stirring and adding water until rice is al dente and creamy.
Taste with salt and pepper.
