For those who don't know millet is ancient grain, very popular in the Indian subcontinent and favoured for its many health benefits. It's not only high in vitamins and minerals but also high in deliciousness.
INGREDIENTS:
½ cup millet
¼ onion, chopped
1 cucumber, peeled and chopped
1 can corn
1 can beans
fresh parsley, chopped
1 tbsp. olive oil
salt and pepper
