Today I would like to share with all of you, my first experience in the preparation of olives and one of my few forays into the world of cooking, if we can call it that.

Hoy me gustaría compartir con todos vosotros, mi primera experiencia en la preparación de olivas y una de mis pocas incursiones en el mundo de la cocina, si es que podemos llamarlo así.

The story begins at a very young age, with my weakness for this little fruit. In 2013, we bought a small olive tree for our terrace, which, at that time, was no more than 20cm high. Time passed, and the little olive tree grew and began to bear some fruits, but without doing anything with them, other than leaving them on the branches so that the birds that every day perch to rest on its branches, could eat them.

La historia comienza desde muy pequeño, con mi debilidad por este pequeño fruto. En el año 2013, compramos un pequeño olivo para nuestra terraza, que, en aquel momento no tenía más de 20cm de altura. El tiempo fue pasando, y el pequeño olivo creció y empezó a dar algunos frutos, pero sin que hiciera nada con ellos, más que dejarlas en las ramas para que los pájaros que cada día se posan a descansar sobre sus ramas, se las comieran.

This year, I decided to collect the few olives that make it to the end of the growing process, and prepare them. As I had no idea, I looked on YouTube, and after watching several videos I made my own interpretation of the canning process, since it did not seem complicated.

  • I cleaned the olives of dust residues with plenty of water.
  • I put them in a container and covered them with water for 24 hours.
  • After these first 24 hours. I changed the water by passing the olives through a strainer, to remove possible unwanted remains. I repeated this process for 6 days, despite the fact that the recipes that I used as a guide indicated that it should be done for 9 days. As I observed that the olives had changed color, I interpreted that they were ready for the next step.
  • To prepare the brine, I used the ratio of 1 part of salt, for every 9 of water. I covered the olives in the final container, along with a mixture of rosemary and garlic branches, with the brine solution that I had previously prepared. Subsequently, I covered the top with a small amount of olive oil and closed the container.

Este año, decidí recoger las pocas olivas que llegan hasta el final del proceso de crecimiento, y prepararlas. Como no tenía ni idea, busqué en YouTube, y después de ver varios videos hice mi propia interpretación del proceso de conserva, ya que no me pareció complicado.

  • Limpié las olivas de restos de polvo con abundante agua.
  • Las introduje en un envase y las cubrí de agua durante 24h.
  • Pasadas estas primeras 24h. cambié el agua pasando las olivas por un colador, para ir retirando posibles restos no deseados. Este proceso lo repetí durante 6 días, a pesar que las recetas que utilicé de guía indicaban realizarlo durante 9 días. Como observé que las olivas habían cambiado de color, interpreté que estaban listas para el siguiente paso.
  • Para preparar la salmuera, utilicé la proporción de 1 parte de sal, por cada 9 de agua. Cubrí las olivas en el envase final, junto a una mezcla de ramas de romero y ajo, con la solución de salmuera que anteriormente había preparado. Posteriormente, cubrí la parte superior con una pequeña de aceite de oliva y cerré del envase.

After just over two and a half months, last weekend, I was able to enjoy my little creation. Here you can see the final result, and I assure you they were very good.

Después de poco más de dos meses y medio, el pasado fin de semana, pude disfrutar de mi pequeña creación. Aquí podéis ver el resultado final, y os aseguro que estaban muy buenas.
