Man, ohh man, what a euphoric recipe! With the smell of coconut and pineapple roasting in the oven and a typical cake muffin smell, it’s simple to make while having that aroma every home baker shoots for! The smell that gets your family wondering “ohhh... 🤤 what are you making this time???”
This is a recipe the comes from a book we dugout of our collection while having a little extra time stuck in the house 😅 our High School’s Student Submission Recipe Book. Deal was we enter recipes the class would create over the year, new book each year and this was from our years collection.
Submitted by Jill Lowe whom ever that was 😝 who remembers high school anyways? It is however an excellent recipe, depending on the coconut used I would suggest adding the juice from your pineapple if the mix seems dry.
As you can see my fiancé was feeling motivated and decided to give it a try reporting only that it was a little dry till adding a few dribbles of pineapple juice. Being stuck in the house we poked through the book choosing this recipe due to things we have in the house already.
We did however run out for things later on but coming to think of it we always have pineapple in a can and coconut in the baking collection as I would assume many other do also.
As for sour cream it’s a you do or don’t kinda thing and when we are thinking how to make use of things then any recipe it’s an ingredient and not topper is a win in my books.
Liquor or Extract 😅 we went with real rum cause that’s what we had and it still turned out pretty dang good... so good we forgot to take a picture before eating them all 🤣 #lockdownmunchies
