Beside experimenting with crypto and NFTs, I also happen to love cooking. It's a great way to eat better for less money, and I find the "Chop! Chop! Chop!" sound of the kitchen knife dicing vegetables kind of soothing (am I weird?), after a whole day in front of the computer and on the phone.
Anyway, today for the first of my recipes I'll share here, I'll start with something easy to prepare that I made a few days ago: a "soup of mixed vegetables, with spices".
Ingredients for a large pot of soup (+/-5L):
You can adjust to the size of your pot/hunger/family to feed, and anyway it's a soup, so I will not set the soup police on you if you use 1 carrot less or a clove of garlic more) :
- ~500g of pumpkin (also works with a 1/2 butternut)
- 1 zucchini (I used a large one)
- 2 leeks (the white part only, keep the green part for something else)
- 7-8 medium size carrots
- 5-6 medium size potatoes
- 2-3 medium size onions
- 2 handfuls of dry green lentils (roughly 100g)
- A little fat (e.g. 2-3 tbsp of oil like sunflower seeds, or ~20g of butter)
- 1 clove of garlic, 1 tbsp of dry thyme, 1 tbsp of ground cumin, 1 tbsp of ground coriander, 1/4 tsp of ground nutmeg, salt, pepper. You can adjust all of this to your taste if you don't like using quite as much herbs and spices as I do.
- optionally: 1 cube of concentrated degreased chicken soup stock
Instructions:
- Peel the potatoes/carrots/oignons/pumpkin, remove the pumpkin seeds and other undesired parts, dice everything very roughly in similar size chunks.
- Put the fat in the pot, put all the vegetables in the pot, heat the pot (medium-high) and stir for 5mn.
- Add water to the pot (until you have ~2cm left to reach the top) and add all the herbs, spices, salt, pepper, garlic + the optional cube of concentrated soup stock
- Reduce the heat to medium-low and let simmer for 15mn
- Add the lentils and let simmer for 35mn more.
- Check that the vegetables are cooked by trying to cut one chunk of carrot with a fork: if you can cut it easily, it's ready, otherwise let it simmer for 10mn more and check again.
- Remove the pot from the heat and mix everything (I use a simple electric hand blender)
- Enjoy (you can add some pumpkin &/or chia seeds to your bowl)
