This is a red anthocyanin pigment extracted from the leaves of Brassica oleracea var. capitata f. rubra (commonly known as red cabbage), using slightly acidic water and undergoing advanced purification. It has a maximum absorption wavelength around 530 nm and changes color with variations in pH. In an acidic range, it appears reddish-purple and is highly stable against heat and light. It is soluble in water, alcohol, propylene glycol, and acetic acid, but insoluble in oils and fats.

 

This time, I made a red cabbage solution.

 

•The leaves of red cabbage are placed in boiling water to make a solution.

•Adding lemon juice turns the solution red, adding flour with lower acidity causes no change, and adding alkaline slaked lime turns the solution blue, then green, and eventually yellow.

Using this solution as a dye, I will now proceed to make pigments.
