Uno de los estilos de cerveza que más se ha puesto de moda actualmente es la IPA. Se trata de cervezas muy amargas, y esta propiedad se la otorga el lúpulo.
Pero antes explicaré brevemente el estilo Pale Ale. Originariamente inglés, se trata de cervezas de fermentación alta, con un típico toque a caramelo y ligeramente afrutadas. En esta variedad, el aroma a lúpulo es bajo, mientras que en las APA (American Pale Ale), si que destacan con bastante potencia los aromas y sabores del lúpulo.
IPA son las siglas de India Pale Ale. La historia que hay tras este estilo es bastante interesante. A principios del siglo XVIII, Gran Bretaña se estableció en la India, donde las tropas británicas (y los civiles trasladados) demandaban las típicas cervezas inglesas, sobre todo las Dark Ales y las Porter. Pero el largo viaje desde Gran Bretaña hasta la India estropeaban la cerveza: cambios de temperatura, movimientos bruscos de los barriles en los barcos, etc... y terminaba por llegar estropeada a su destino.
Al final, sobre 1790, dieron con una solución, concrétamente George Hodgson, un maestro cervecero inglés: aumentar la cantidad de alcohol y de lúpulo, para de esta manera, evitar tanto que las bacterias como la acidez estropeasen el tan apreciado brebaje. Y efectivamente así fue, la cerveza llegó en perfecto estado de conservación a la India.
Se convirtió en un estilo muy copiado, y hoy día, ha vuelto a renacer, convirtiéndose en uno de los estilos mas fabricados, tanto de forma casera como industrial, y con el que se experimenta continuamente, creando versiones de lo mas extravagantes. Es más, tal ha sido la popularidad del estilo que se ha creado una copa exclusivamente para las IPA. La fabrica Spiegelau y es esta:
