Let's eat! Let's make us a delicious proven nice classic German cheesecake with a speculoos bottom, the time it will take is less than 2 hours!
Work time: 30min
Baking and smelling and tasting time: approx 90min.
What do you need?
For the bottom:
300g of speculoos cookies (the simplest)
1/2 pack backing powder
1 egg
80g of butter (you can be generous)
For the filling:
1kg of Quark ( yes 1 kilogram)
4 eggs
150g of Sugar (feel free to leave the sugar as you already have in the cookies)
1 pack of Vanilla sugar
1 pack of Vanilla powder
400mg of milk
A little oil ( we are talking less than teaspoon here)
A few drops of lemon juice (from a fresh lemon best)
How you do it?
Part 1 the dough for the bottom
Using a rolling pin, pound the speculoos into small pieces and place in a bowl. Add the butter, egg and baking powder and knead into a dough. Add sugar to your liking (again the speculoos is already sweet), I added sugar;)
Grease the springform pan and line the bottom with baking paper. Pour the dough into the springform pan and press it down.
Part 2 the filling
For the filling, add the quark, eggs, vanilla sugar, pudding powder, sugar, milk and oil to the bowl and stir, if you like squeeze a few drops of lemon into the mix. The mass is very liquid. Pour the mixture into the mold, it will spread itself.
Preheat the oven to 175°C.
Bake the cake on the lowest rack for about 75 minutes. (stick sample!)
Remove the cake from the oven and let it cool completely, maybe even over night but in an open oven!
