This is one of my all time favorite bread recipes that I love to use. Its really easy to make and really yummy. I love blueberries, being from NJ where they grow wild in my moms front yard. This was the only thing I could think of making besides muffins. We had so many blueberries it came out pack. We also had some that we froze them to use next time. Now you add zucchini gives more body to your bread and its very delicious. You can tweak this to your liking as always. Hope you enjoy.
What you need:
3 eggs beaten
1 cup vegetable oil
3 tsp vanilla extract
2 1/4 cups sugar
2 cups finely shredded zucchini
3 cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tbsp ground cinnamon
1 pint fresh blueberries or 2 cups frozen(fresh is always better)
Heat oven to 350 degrees. Grease 2 loaf pans.
In a bowl beat eggs, oil, sugar and vanilla. Fold in zucchini.
Beat in flour, salt, baking powder, baking soda and cinnamon.
Gently fold in blueberries.
Pour this into your loaf pans equally.
Bake for 1 hour til knife comes out clean. Set to side and cool.
Enjoy.
