After pulling them out of the ground and cleaning them up nicely, I placed them on my table and got a closer look at them. Otherwise they would have just been consumed and I wouldn't have had any pretty pictures of the spuds pulled from the ground.
Something was getting into the hay and making little holes in many of the Sweet Potatoes. Though these holes only go in to the surface and can be cut away.
We had "vines" of little Sweet Potatoes, a couple of the spots where they were growing had more small Potatoes instead of single big ones.
I like the shape of this one, looks like it almost split into two but then decided to stay one. And had a nice little root tail on it.
I pulled off the little hairs before cooking otherwise they would just burn up. I found cutting into the large Sweet Potatoes alot of work, the smaller ones are easier to work with when using a knife.
All of the harvest except the largest spud showed off in the first post. We imminently cut that up and made some delicious Sweet Potato fries and some Thai dessert using chunks of Sweet Potato and Coconut milk.
Looking forward to next year where I can do this all over again.
