By space6irl | raw-vegan | 23 Jan 2022

CHOCOLATE FUDGE

This raw vegan chocolate fudge is a super simple recipe. There are not many ingredients. Yet, there is a rich and moist chocolatey flavor which tastes heavenly! When I crave chocolate, I usually make this! I don’t think words can do it justice. You will have to try this yourself and see what I mean.

Chocolate Fudge (raw vegan)

Rich chocolatey fudge is the perfect dessert for any chocolate lover. Follow this simple recipe and enjoy this sweet pleasure!

PREP TIME: 8 mins

TIME IN FRIDGE: 4 hrs

EQUIPMENT

  • processor

INGREDIENTS

  • 2 cup dates (make sure there are no pits!)
  • 2 tbsp cacao powder
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract (or fresh vanilla bean)
  • pinch salt (sea or Himalayan)

INSTRUCTIONS

  • Add all ingredients into the processor and blend into uniform consistency.
  • Shape into a cube and place it in a container in the fridge.
  • Let chill to your desired consistency. Enjoy

NOTES

Sometimes I eat it right after I make it. However, it will harden and be easier to cut into cute pieces if you chill it. fudge raw vegan recipe

RAW TIP FOR FUDGE PROCESSING

When the fudge is in the processor, pulse it a few times. This helps the big chunks fall to the blades. Pulsing it some will make the process go faster.

When the mixture is starting to form a ball, you’re finished! The consistency will be looking uniform at that point.

If you let it go on and blend more, it will be more messy. Don’t worry, it will still taste good. However, the fudge really sticks to the inside of the processor when it blends too long. This would make it more difficult to clean.

So, I suggest finishing processing as soon as a uniform consistency and ball-type of shape appears.

It is also possible to make this with a Vitamix blender, though you will have to use the tamper to push the fudge towards the blades.

DATES AND CHOCOLATE – GREAT RECIPE COMPANIONS!

The main ingredients for this fudge recipe.

AWESOMENESS OF DATES:

Dates can be linked to better bone health.

“Dates contain several minerals, including phosphorus, potassium, calcium and magnesium. All of these have been studied for their potential to prevent bone-related conditions like osteoporosis.”

– Brianna Elliott, RD

They also help with heart health and are full of other goodies.

“[Dates] contain large amounts of phytochemicals – naturally occurring plant chemicals that can lower cholesterol. [They] reduce the risk of heart disease, and have antioxidant, anti-inflammatory, anti-cancer, neuroprotective and antioxidant properties, among other benefits.”

Weill Cornell Medicine-Qatar

There are many other health benefits, too.

In general, dates are a great sweetener for raw cuisine.

Dates are natural, unprocessed, and raw! Many sweetners are sketchy when it comes to the raw lifestyle. Most syrups (such as maple) are heat treated at a level that’s not technically raw. Agave is another iffy one, too. Dates, on the other hand, are one ingredient that I can trust the most out of all my favorite sweetener options.

Now, some notes on chocolate.

CHOCOLATE (CACAO) CONTAINS:
  • Magnesium – Helps prevent osteoporosis. Also helps prevent type 2 diabetes and lowers blood pressure.
  • Theobromine – A cough suppressant.
  • Serotonin – Induces feelings of well-being.
  • Flavanols – Good for heart health and is an anti-inflammatory. Also helps improve cholesterol levels and prevents hardening of arteries. Phenethylamine – Triggers endorphin release.
  • Anandamide – Improves mood.
  • Polyphenol Antioxidants – Protects cells from oxidation. This slows the signs of aging.
