If you’re a porridge fan, you’ll absolutely love this recipe!

Of course the carrots are optional, but they’re great to add a little bit more of volume to your oats, and of course, boost the nutritional value of the dish. I usually like to add an extra veggie to my breakfast especially on Sundays. These days I normally wake up a little bit later and a little bit hungrier… haha So it kind of turns into a bigger brunch, instead of my normal breakfast. Other veggies I occasionally add are zucchinni and beets. All of these don’t really add any extra taste to the food, but they add so much nutritional value and volume. I especially like to add beets, because it turns the whole thing pink! :)
For this recipe, I also decided to add chai tea to cook the oats, just to add a bit more flavour. But you can totally skip this and just add normal fresh water, we already add a lot of spices on this recipe, so don’t worry too much about it!!
Another thing I really like to add to my breakfast is cayenne pepper! I know, not your usual porridge ingredient, but I started adding a little bit for that extra spice and extra help on waking me up in the mornings. After that, it just became an addiction haha if you’re a spice lover, you should definitely try it out!
Let's get to the recipe!!
Ingredients:
2 small grated carrots
5 tbsp porridge oats
1 tbsp ground flax seeds
water to cook the oats - fresh or infused with chai tea.
1 ripe banana
1 apple
2cm ginger - chopped in the smallest pieces you're able to
vanilla extract
spices:
ground cinnamon
ground cloves
ground nutmeg
ground ginger
ground cayenne pepper (optional)
Method:
→ Chop the apple in small pieces
→ Add the apple, chopped ginger, grated carrots and a pinch of cinnamon to a saucepan in a medium to low heat with a little bit of water (or chai tea) - just enough to roughly cover it

→ Cover the pan and let it cook while you prepare the rest
→ In another saucepan add the oats and flax seeds with water (or chai tea) to a low heat
→ In a bowl - mash the banana and mix in the spices and vanilla extract

→ When the oats starts to get into that porridge consistency, add the banana mixture to the saucepan and give it a mix, keeping it in a very low heat.

→ Check on your apple mix and if the apples are already cooked take off the lid, turn up the heat to max and wait for the rest of the water to dry out
→ At this point, you can also add a little bit of maple syrup, honey or any sweetener of your choice, if you like it sweeter. - I honestly think that the sweetness brought by the banana is already enough, but it also depends on how ripen it was, the more, the sweeter.
→ When the water is gone, you can give it a mix on the high heat, to get that extra flavour, and then dump it all on your porridge pan!
→ Mix it all up for about a minute or so, just to incorporate all the flavours
IT'S DONE!!

Now you can add all your favourite toppings!

For this one I added sunflower seeds, pumpkin seeds, chopped almonds and goji berries! But the options are infinite! Let me know in the comments your favourite toppings!
