Sorry I spoiled the content on the tittle but just naming this post "January's goals" didn't seem right, as the diet is planned to transcend this month and become an integral part of my life.
So I made an hypocaloric diet myself. I've put some work, logical thinking, knowledge (I took 4 subjects about nutrition during culinary school) and, more than anything, research. I also know this diet won't be perfect at all from the start and it'll need some adjustments as I get used to it. Many things can happen such as I may not loose enough weight, I may loose too much weight (yes, that's a thing, and a quite unhealthy one at that), I may have poorly chosen some dishes, I may not have time to cook what I need, or the organization, the space... It feels like the most difficult part about this endeavor will be the mental space it takes to pay attention to all these things and adjust accordingly. The food part will be the easy one.
Anyway, it's done now and the best way to test how it works is to just use it, so here we go.
I also plan on following the great advice from @7th Decade Redhead and just take it one day at a time. That way I can celebrate my wins and cut my loses and also have a new chance for success every day. I'm sure that with some patience and grit it'll get easier overtime.
I'll be returning home from my vacation on Thursday and then I'll have to go and do my groceries. At least I already have a list with everything I'll need to buy in order to support my new eating habits.
I'm also planning to visit my new family doctor sometime before next month. I don't know him yet so I don't know his approach to bodyweight, dieting or anything in general but I have to order my annual blood tests so the topic may come up.

P.S.: On my last post I forgot to mention that I actually tried going to the gym but as suspected it's not a great place for people who get easily overwhelmed by noise so I'm also adjusting my schedule to make exercising at home easier.
