There is no great philosophy here. All the ingredients are from home crops, they do not look impressive, but they are incredibly tasty and aromatic: tomatoes, onions, garlic, eggplants, okra, carrots, habanero pepper
No spices - just a little salt!
We have a somewhat limited kitchen here in Zanzibar, so the photos of objects and surroundings may not be stunning. Nevertheless, the recipe is from our boss, it is simple, and writing this post I can say that it is brilliant. Because due to the right selection of vegetables, we did not use any spices except salt.
Preparation
First, cut the onion and garlic into small cubes and fry them in a little olive oil.
Cut the tomatoes, okra, carrots and habanero peppers finely, previously scalded and peeled and add to the fried onion with garlic
Add carrots and okra, which are vegetables that need longer cooking time, to the fried onion with garlic.
Then add the peeled tomatoes Ny
In the last stage, add a large cubed eggplant to the boiling vegetables
Best served with loose rice, but can also be served with white bread
