One large duck body, 2 large carrots, 1 large parsley (root), 1 leek, a piece of Italian cabbage, green parsley, 1/2 celery, home-made pasta Spices: salt, pepper, allspice, leaf bay leaf, veggie, soy sauce (maggi).
Put the washed duck body in cold water and simmer it over low heat until boiling. We collect the so-called scum (truncated protein). Add the peeled and washed vegetables, salt, pepper, allspice, maggi bay leaf and cook over very low heat until the vegetables are tender. Season to taste with spices again.
Serve with home-made pasta and chopped parsley
