Tonight's dinner was Obe'ata stew, a rich, spicy West African-inspired dish that's all about turning simple ingredients into something deeply comforting. Every household has its own twist!
At its heart it's a slow-cooked stew packed with vegetables, warming spices, and bold flavours that develop the longer they simmer. I got a "mild" pack of Obe'ata stew sauce Nigerian style!
I went with a "use what you've got" approach and raided the fridge instead of the supermarket. Into the pot went carrots, onions, and green beans, while raisins and figs added a natural sweetness that perfectly balanced the heat from the spices.
Those little bursts of sweetness made each bite a bit different and stopped the stew from becoming overpowering. To round everything off, I served it with a side of fluffy rice, which soaked up all that rich sauce.
It's amazing how a handful of leftovers can come together to create something that feels like a proper homemade feast. However... I had a surprise when I started eating... because it wasn't that mild!
Obe Ata literally translates to "pepper stew" in the Yoruba language (obe means "stew" or "soup," and ata means "pepper"). It's one of the foundation sauces in Nigerian cuisine and is known for its rich smoky taste!
Many families then add a protein such as beef, chicken, goat, fish, or turkey, although it can also be enjoyed as a vegetarian stew with vegetables. I served with rice but works well with yam or plantains!
There isn't one "official" recipe and some make it fiery hot, while others prefer a sweeter tomato base, and many add vegetables or even dried fruits like raisins to balance the spice.
It's a good reminder that some of the best meals don't come from following a recipe to the letter! Class comes from being creative with what's already in your kitchen, and reducing food waste!
What about the perfect egg sandwich? I'd been seeing this new method all over my feed, so I finally gave it a go... and I get the hype. The trick is surprisingly simple and I made a video for you!
Start by placing a slice of bread in a lightly buttered pan and toast it just enough to get a little colour. Flip it over, crack an egg directly onto the toasted side, and let it cook until it starts to set.
Flip everything again, add a slice of cheese while the egg is still hot, then fold the sandwich over and let the cheese melt into that perfectly cooked egg. That's it. Crispy on the outside, soft in the middle, with gooey melted cheese holding everything together.
It's one of those recipes that looks almost too simple to be worth trying... until you take the first bite. Minimal ingredients, minimal effort, maximum satisfaction. Sometimes the internet really does get it right.
