For this 2nd recipe I'll share here, I'll go from the soup to the plat de résistance with pork tenderloin in homemade spiced tomato sauce. I like it spicy and hot, but you can tone down those to suit it to your taste, of course.

Ingredients for 4-6 persons:
- 1 pork tenderloin (+/- 800g). You can replace it e.g. with chicken breasts or a turkey roast if pork is not your thing.
- 3 medium size onions
- 2 large tins of cooked tomatoes or ~800g-1.2kg of fresh ones
- A little fat (e.g. 1-2 tbsp of oil like sunflower seeds, or ~10-15g of butter)
- 2 cloves of garlic
- ~2cm of fresh ginger root (can be replaced by 1-2 tsp of dry one)
- 1/4 of a small hot pepper
- 5 cloves of green cardamone
- Rice as a side dish
- Salt & pepper

Instructions:
- Cut the pork tenderloin in 3 pieces. Put it in a large pan or pot with the fat on medium-high heat.
- Peel the 3 onions and roughly dice them
- When the pork starts to release its juices (after 5-10mn), reduce the heat to medium or a bit lower, add the onions and cover your pan.
- Thinly dice the garlic, ginger and hot pepper. Roughly dice the tomatoes.
- When the onions have become translucent (after 10-20mn), add the garlic, ginger, hot pepper and tomatoes. Add the cloves of cardamone (as an option, you can squash them a little beforehand) and salt to your taste.
- Cover and let it simmer on low-medium heat for 30mn in order to reduce the quantity of liquid a little and cook everything together.
- While the meat is cooking, you can take care of the rice. If you have a rice cooker, I suggest you use it and add 2 or 3 tbsp of mixed seeds for a little something more. I suggest a mix of pumpkin, chia and flax seeds for a start, but experimenting yourself is best.
