Fillet of pork rolled in bacon, coated with an onion-mustard-honey crust

Hello again, I hope you are well and you want to cook because here I present you a new recipe

 


Ingredients for 4 servings:

1 fillet of pork (s)
Two pcs. Bacon
2 large onion (s)
2 tablespoons of butter
1 tablespoon of mustard
1 tablespoon of honey
Breadcrumbs
Salt and pepper
Parsley, tr. Chili

 

Preparation


Melt the butter in a saucepan, dice the onions and sauté in glass. Add mustard and honey and season with a little salt, pepper, parsley and chilli at will. To obtain a finer consistency, puree the mixture. This can already happen the day before, then the spices combine well, in this case cold over night!

 


 

Preheat the oven to 220 °C top/bottom heat. Oil a board a little and place the bacon on it slightly overlapping. Season lightly with pepper, salt is not necessary, as the bacon is already salty. Place the fillet on it and wrap it gently in the bacon. Fry the roller sharply in a pan and then place in a baking dish.

 


 

Add the leaked meat juice to the marinade. Thicken the prepared marinade with some breadcrumbs and spread the fillet with it. Place the baking dish in the oven on the middle rack and fry the meat for 40 - 45 minutes. Frying potatoes, spätzle or ribbon noodles and, for example, a mustard cream sauce.
