During the winter, I collected Potatoes that sprouted before I could get to cooking them. After saving a half dozen I waited till the frost was over and cut them into chunks leaving the eyes on each piece. Theres also a little sweet potato in the bin though I think its too small and did not form any eyes on it. The eyes are the sprout coming out of the root vegetable that will grow the stalk and leaves above ground.

I left them out in the open so the pieces would callus and form a protective barrier.

I placed the pieces with eyes after drying out in the dirt. My raised garden bed is good for digging in later in the year. I built a hugelkultur in the beds before adding dirt on top so any churning is going to release nutrients.

I mixed in wood mulch with the dirt to add more components for healthy dirt bacteria to break down.

A sweet potato is coming up, I planted this a week before the others and it already has some small leaves. Last year they grew quite vigorously. Wonder how the sweet potateos will handle being grown in the same box as the Yukon Gold potatoes.
