
Lentinula edodes - Hat diameter 50 to 100 mm, young almost spherical, later convex and then flat, with a long folded edge; surface of a red-brown, milk-chocolate-brown, gray-brown, covered with white wisps, thicker and denser at the edges.
Plaques, broad, of various length, adnate to the stipe straight or sinuate. White color.
Stem full, hard, elastic, set in the middle or slightly eccentric, often bent. Tannins whitish, light brown, with age bronzing. On the surface covered with white wisps, darker in the upper part.
Flesh in the hard core; in a hat quite soft, elastic, woody in old individuals. White color. Taste mild, spicy, very aromatic scent, a little garlic.
Occurrence: Asian species, originating from China and Japan; grows on the dead wood of deciduous trees in groups throughout the year; in the East widely cultivated, in a colder climate grown in greenhouse conditions.
Value: Mushroom, very tasty; by subjecting it to heat treatment you have to do it briefly because it hardens.
